Blackberry Dumplings recipe
Ingredients:
1 quart of fresh or frozen blackberries.
1 cup of sugar.
½ teaspoon of salt.
½ teaspoon of lemon extract.
1 ½ cups of all-purpose flour.
2 teaspoons of baking powder.
1 tablespoon of sugar.
¼ teaspoon of ground nutmeg.
¼ teaspoon of salt.
2/3 cup of milk.
Directions:
Preheat your oven to 400°F (205°C).
In a Dutch oven, combine the blackberries, 1 cup of sugar, ½ teaspoon of salt and lemon extract. Bring to a boil. Reduce heat and simmer for 5 minutes.
In a mixing bowl, combine the flour, baking powder, 1 tablespoon of sugar, nutmeg and ¼ teaspoon of salt. Add the milk and stir just until mixed. The dough will be very thick.
Drop by tablespoonfuls into six mounds onto the hot blackberry mixture.
Bake for about 40 minutes.
